Ube Roll Cake

Ingredients

Cake Batter:

  • 1 cup of cake flour
  • 1/2 cup of sugar
  • 1 - 1 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 5 large eggs
  • 1/2 teaspoon of vanilla extract
  • 1/4 cup of evaporated or fresh milk
  • 1 teaspoon of ube flavouring
  • 1 teaspoon of liquid purple food coloring
  • 2 tablespoons of vegetable oil

Ube Filling:

  • 1 cup of softened butter
  • 1 cup of powdered sugar or confectioners sugar
  • 2 tablespoons of evaporated milk or fresh milk
  • 1 tablespoon of Ube flavoring
  • 1/4 teaspoon of purple food coloring

Buttercream Frosting:

  • 1/2 cup of water
  • 3/4 cup of sugar
  • 2 egg whites
  • A pinch of salt
  • 12 tablespoons of softened butter

Instructions

Ube Filling:

  1. Combine the evaporated milk, ube flavoring and liquid food coloring in a bowl.
  2. Mix well then set aside.
  3. In another bowl add the (room temperature) butter.
  4. Cream the butter by whipping it with a whisk.
  5. Once the butter is creamed, add the confectioners sugar.
  6. Mix the confectioners sugar and butter together until the confectioners sugar is dissolved and smooth.
  7. Then gradually add the liquid mixture to the butter mixture while continuing to stir until the frosting is smooth and well blended.

Buttercream Frosting:

  1. In a mixing bowl, beat the egg whites with a whisk until frothy.
  2. Add the salt and 1 tablespoon of sugar.
  3. Continue to beat the egg whites until soft peaks form.
  4. Set aside the egg whites.
  5. In a sauce pan, combine the water and the remaining sugar.
  6. Stir until sugar is completely dissolved.
  7. Now bring the water to a boil over medium heat without stirring it.
  8. Boil for 3 minutes to make a simple syrup then remove it from the heat.
  9. Slowly pour the syrup into the egg whites while beating constantly until meringue forms.
  10. Let the meringue rest until it is cool to the touch.
  11. Now add softened butter to the meringue 1 tablespoon at a time, beating well after each addition until the mixture is smooth.

Cake Preparation:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Line a large baking pan with parchment paper.
  3. Sift the cake flour, baking powder, and salt together into a bowl.
  4. Mix well then set aside.
  5. In another bowl combine the milk, vanilla, food coloring, vegetable oil, and ube flavoring.
  6. Mix well then set aside.
  7. In a separate bowl, beat the eggs and sugar with a wire whisk until soft peaks form.
  8. Now gradually add the dry ingredients into the egg and sugar mixture while whipping with the wire whisk until well blended.
  9. Then add the liquid mixture while continuing to stir until well blended.
  10. Pour the batter evenly into the prepared pan and smooth the top of the batter with a spatula.
  11. Bake for 25 minutes or until a toothpick inserted into the batter comes out clean.
  12. Remove cake from the oven and let it stand for 10 minutes.
  13. Get a new piece of parchment paper that is slightly bigger than the cake.
  14. Place the parchment paper on a flat surface then lightly dust the surface with powdered sugar.
  15. Carefully turn the cake over onto the parchment paper.
  16. Slowly peel off the parchment paper that the cake was cooked on.
  17. Now get another piece of parchment paper that is slightly bigger than the cake.
  18. Lightly dust the top of the cake with powdered sugar then place the second piece of parchment paper on top of the cake.
  19. Now using the bottom piece of parchment paper, carefully roll the cake into a spiral cylinder shape.
  20. Set the cake on a cooling rack to rest until it is cool enough to be comfortably handled.
  21. When the cake has sufficiently cooled, unroll it so that it is flat again and discard the top piece of parchment paper
  22. Spread the ube filling evenly on top of the cake then use the bottom piece of parchment paper to slowly roll the cake into a spiral cylinder shape again.
  23. Place the rolled cake on a cake tray.
  24. Cut off a thin slice from both ends of the cake roll.
  25. Put the ube buttercream in a piping bag and apply it to the surface of the cake.
  26. Spread the buttercream frosting over the entire surface of the cake.
  27. Then decorate as desired; sprinkle with purple-colored sprinkles or top with a cherry.
  28. Refrigerate before slicing.
  29. Serve and enjoy!

Remember to not roll the parchment paper inside the cake. You just use the parchment paper to roll the cake into a spiral shape from the outside of the cake. If you are doing all this by hand, without an electric mixer, you may need someone to assist you at times. You can also add macapuno in your ube filling for extra flavoring if you'd like.
