Suman Moron

This is Suman Moron. Suman Moron is a particular type of suman made with a chocolate layer twisted around the vanilla layer, so it creates a spiralized appearance and it has crushed peanuts too. The crunch of the peanuts is what makes this suman a crowd favorite. This is made with glutinous rice flour (malagkit). I would eat this everyday sprinkled with sugar if I could. It’s that addicting. Ingredients

Vanilla Layer

  • 1 1/2 cup of rice flour
  • 1/2 cup of glutinous rice flour
  • 1/2 cup of evaporated milk
  • 1 cup coconut milk
  • 1 cup of white sugar
  • 1 teaspoon of vanilla extract

Chocolate Layer

  • 1 1/2 cup of rice flour
  • 1/2 cup of glutinous rice flour
  • 1/4 cup of unsweetened cocoa powder
  • 1 1/2 cup of coconut milk
  • 1 cup of brown sugar
  • 1/2 cup of crushed peanuts
  • 1 teaspoon of vanilla extract

Instructions

  1. For the vanilla layer, combine all the dry ingredients in a mixing bowl.
  2. Stir the mixture with a whisk or fork until well blended.
  3. Add the evaporated milk, coconut milk and vanilla extract to the mixing bowl.
  4. Stir again until this is well blended.
  5. Pour the mixture into a pan over low heat.
  6. Stir this for 10-15 minutes or until the mixture turns into a thick paste, making sure there are no lumps.
  7. Turn the heat off and set this aside to let it cool.
  8. For the chocolate layer, combine all dry ingredients in another mixing bowl.
  9. Stir this with a whisk or fork until well blended.
  10. Add the coconut milk and vanilla extract to the mixing bowl.
  11. Stir again until this is well blended.
  12. Pour the mixture into another pan over low heat.
  13. Stir this for 10-15 minutes or until the mixture turns into a thick paste, making sure there is no lumps.
  14. Add the crushed peanuts to the pan and fold them into the paste.
  15. Turn the heat off and set it aside to cool.
  16. Prepare the banana leaves by heating them over low fire.
  17. Brush the leaves with melted butter or other cooking oil.
  18. Scoop 2 tablespoons of the vanilla mixture into a banana leaf, then roll it into a rope like shape.
  19. Now scoop 2 tablespoons of the chocolate mixture into a banana leaf, then roll it into a rope like shape.
  20. Combine the two mixtures together, twisting them together in a spiralized way.
  21. Place this mixture in the banana leaf again and roll it until its one combined piece.
  22. Wrap the mixture with the banana leaf, fold until it's closed, then tie it with string or with the strip of the banana leaves.
  23. Repeat this process until all of the mixture is wrapped in banana leaves.
  24. Steam these for 30 minutes.
  25. Remove them from the steam and serve while still warm.

The technique for rolling the suman mixture can take some trial and error. Just think of it like you are rolling dough for bread sticks.
